Badger Flame Beet and Radish Salad with Vinaigrette

Thinly sliced beets, radishes, and carrots with a sweet and tangy dressing, making for a crisp, flavorful salad that’s perfect for any meal.

Ingredients

  • 1 badger flame beet

  • 1 bunch of DFF radishes

  • 1 watermelon radish

  • 2-3 purple or orange carrots

  • Parsley for garnish

Instructions

    • Peel badger flame beet
    • Julien roots on thinnest setting and place in ice cold water bath for 5-10 minutes to make them extra crunchy
    • Combine and dress with a simple vinaigrette of choice
    • Garnish with parsley
    • 1/3 cup extra virgin olive oil
    • 2 tbs of vinegar or lemon juice
    • 2 tsps dijon mustard
    • 1 minced garlic clove
    • 1-2 tsps honey
    • Salt and pepper to taste
