Herb Tulip Toasts

Inspired by the beauty of warmer seasons, these Herb Tulip Toasts bring a touch of whimsy to any spring or summer table. Easy to prepare ahead, they’re sure to be a cute and fresh addition to your spread.

Ingredients

  • 1 baguette, sliced

  • 3 tbsp extra virgin olive oil

  • 2 cups ricotta cheese

  • 2 tbsp DFF Organic Basil, finely chopped

  • 1 tbsp DFF Organic Chives, finely chopped

  • 1 pint cherry tomatoes

  • Salt & pepper, to taste

  • Balsamic glaze, for drizzling (optional)

Instructions

    • Preheat oven to 350°F
    • Slice the baguette into 15 slices, about ¼-inch thick, cut on a bias.
    • Arrange slices in a single layer on a baking sheet. Drizzle with olive oil and lightly rub to coat each slice.
    • Toast for 15–20 minutes, or until lightly golden.
    • Herbed Ricotta

    • In a small bowl, combine the ricotta, basil, chives, 1 tablespoon olive oil, salt, and pepper. Mix until well blended.
    • Spread a generous layer of the herbed ricotta onto each toasted baguette slice.
    • Tulips Toasts

    • Using a sharp knife, make four lengthwise cuts in each cherry tomato, stopping about ¾ of the way down. Gently press the base of the tomato to open the sections and create a tulip-like shape.
    • Arrange the tomato tulips on top of the ricotta. Garnish with basil and chive stems as the tulip stems and small basil leaves as the tulip leaves.
    • Serve immediately. If preparing ahead, refrigerate for up to 1 day. Let the crostini sit at room temperature for about 30 minutes before serving to take the chill off.
