Radish Microgreen Stir-Fry with Tofu

Ingredients

  • 1 tablespoon vegetable oil

  • 8 ounces firm tofu drained and cubed

  • 2 cups radish microgreens

  • 1 bell pepper thinly sliced

  • 1 carrot thinly sliced

  • 2 cloves garlic minced

  • 2 tablespoons soy sauce

  • 1 tablespoon hoisin sauce

  • Cooked rice or noodles for serving

  • Optional: red pepper flakes for added heat

Instructions

    • Heat vegetable oil in a large skillet or wok over medium-high heat.
    • Add tofu cubes and stir-fry until golden brown on all sides. Remove from the skillet and set aside.
    • In the same skillet, add radish microgreens, bell pepper, carrot, and minced garlic. Stir-fry for a few minutes until the vegetables are tender-crisp.
    • In a small bowl, whisk together soy sauce, hoisin sauce, and red pepper flakes if using.
    • Add the cooked tofu back to the skillet and pour the sauce over the ingredients. Stir-fry for an additional minute to coat everything evenly.
    • Serve the stir-fry over cooked rice or noodles. Enjoy the vibrant flavors and textures of this dish.
