Salad a Day the Duncan Way Breakfast Salad
Ingredients for 1 Serving
- 2 cups mixed red and green butter lettuce
- 1/4 cup shredded carrots
- 1/8 cup chopped pistachios
- 1/2 cup halved cherry tomatoes
- juice of 1/2 a lemon
- 4 tbsp olive oil
- S & P
- 1 egg, soft boiled
- 1/2 apple, sliced
- Toss together the greens, carrots, pistachios, and tomatoes.
- Whisk together lemon juice and olive oil and season with S&P. Toss with the greens.
- Add the cooked egg and sliced apple.
- Mix all together while eating for a healthy way to start your day.
