Salad a Day the Duncan Way Breakfast Salad

Ingredients for 1 Serving

  • 2 cups mixed red and green butter lettuce
  • 1/4 cup shredded carrots
  • 1/8 cup chopped pistachios
  • 1/2 cup halved cherry tomatoes
  • juice of 1/2 a lemon
  • 4 tbsp olive oil
  • S & P
  • 1 egg, soft boiled
  • 1/2 apple, sliced
  Instructions
  1. Toss together the greens, carrots, pistachios, and tomatoes.
  2. Whisk together lemon juice and olive oil and season with S&P. Toss with the greens.
  3. Add the cooked egg and sliced apple.
  4. Mix all together while eating for a healthy way to start your day.
